Q. What Equipment to I need to Make Freezer Jam?

A. You will need a large bowl, large spoon, freezer containers, small saucepan, fruit, food chopper or potato masher, sugar, and pectin.

If you are thinking of making freezer jam not too much special equipment is required. You probably have most of the items needed in your kitchen. The main things you will want to make sure you have on hand are freezer containers, your fruit, sugar, and pectin.

You will want to chop your fruit in a food chopper or smash it with a potato masher. Jam has bits of fruit in it so don’t over process your fruit.

Then combine the fruit and the amount of sugar that is called for in your recipe in a large bowl. Mix it together using a large spoon. In most recipes, you will allow the sugar and fruit to sit for about 10 minutes, stirring every couple minutes.

Meanwhile, prepare your pectin as directed in your recipe. Normally, you will add it to some water about ¾ cup in a small saucepan. After you have prepared the pectin add it to your fruit and sugar mixture and stir for about 3 minutes.

Then, you can spoon your jam into your freezer containers. You will want to let them sit at room temperature for 24 hours before placing them in the freezer. Remember, to label them with the contents and the date prepared. When you are ready to use just thaw in the refrigerator and then enjoy!

Canning Supplies – 3 Do’s and Don’ts When Home Canning

If you are new to home canning this year, like so many other people, you will want to follow these simply do’s and don’ts.

Do’s

1. Always Use Canning Jars and Brand New Lids – It is important to that you use jars that are specifically designed for canning. Also, make sure you use brand new lids. You can reuse canning jars and bands from year to year, but always use brand new lids to ensure a proper seal.
2. Always Check the Jars for Cracks and Chips – Before you use any canning jar, make sure you inspect it for any cracks or chips. Pay close attention to the rim of the jar. If there is a chip on the rim you will not get a proper seal after processing the jar.
3. Always Label Your Canned Goods – After your canned goods have cooled and they are ready to be stored, make sure you label each jar. Write the contents and the date canned on the lid with a permanent marker or on a canning label.

Don’ts

1. Never Pour Hot Liquid into a Cold Jar – You will need to heat your canning jars before pouring your hot contents into the jar. If you don’t it is a good chance you will break the jar.
2. Never Adjust the Recipe - Following your recipe when canning is crucial for getting the best results. Using the proper amount of sugar in a jam or jelly recipe is very important. And always process jars the correct amount of time to give you a safe finished product. Make sure to adjust processing time based on your altitude.
3. Never Over-Tighten the Bands – When you are screwing on the bands before processing, be sure not to over-tighten them. You will want to adjust them just so they are finger tight. A good way to make sure you do not over-tighten the bands is to screw them on using only your thumb and one finger.

So, as you can see, if you follow these do’s and don’ts you will have a successful canning season.

A. You can safely use canning jars and bands year after year. However, always use new lids when home canning to get a proper seal.

Canning jars can be used again and again. You will want to inspect them before each use for any cracks or chips, especially around the rim of the jar. If you have any old canning jars that are colored do not use them for canning. They probably have lead in them because that is how they used to make the colored glass.

Canning bands or rings, as they are sometimes called, can also be used from season to season. You will want to make sure they have not been bent. Test each one to make sure it screws on to a canning jar properly and it will be good to use again this year.

Canning lids should never be reused for canning. You will always want to use brand new lids when doing your home canning. You can, however, use old used lids when dry-packing in jars that you use for vacuum sealing.

Reusing your canning supplies is a great way to save money. Saving money is one of the main benefits of preserving your own food. If you give some of your canned goods to family and friends for gives throughout the year, don’t be afraid to ask for the jars back when they are finished. They will certainly understand and they probably won’t use them anyways unless they do home canning themselves.
